I'd say it stems from the day where you marked your horses, cows and w.e by burning your name/initials/logo/w.e on the animal's rear to mark who it belongs to. Simple fact is it's a nice good spot to put a mark, easy to see and mostly in plain sight with no mane or neck or rider in the way.
